Ted bakes

We’re working up to going gluten free (for me this will be *again*) in the next few weeks, so we’ve been working on using up the gluten-based grains (I may well go the whole grain-free hog, but gluten-free is a good start).  As part of doing this, Ted decided to make some peanut butter-oatmeal cookies (which are dairy and wheat free) – possibly the most simple cookies in the world, comprising solely of peanut butter, oatmeal, sugar and bicarb.  They’re super tasty and were gone pretty quickly, but I already have ideas for gluten and legume free cookies to make in the future 🙂
In the meantime: bye bye oats…
